Soybean sprout drink powder development enriched with sappan wood powder as a bone health drink using the foam mat drying method
Consumption of protein and isoflavones is a natural approach to improving bone mass. Furthermore, antioxidant compounds such as sappan wood powder have been shown to effectively prevent osteoporosis by protecting bone cells from oxidative stress during bone formation and repair. This study aimed to develop a bone health drink utilizing soybean sprout extract enriched with varying concentrations of sappan wood powder rich in brazilin, using the foam mat drying method—known for its practicality and cost-effectiveness. The results indicated that adding sappan wood powder did not significantly affect the water content or pH of the drink. However, significant increases were observed in water activity (aw), solubility, hygroscopicity, and foam density, while foam stability decreased. The brazilin content ranged from 12.50 to 35.07 ppm, correlating with enhanced antioxidant activity (21.81%– 53.93% radical scavenging activity, RSA) and total phenolic content (32.95–202.53 mg GAE/100 g). Although the levels of vitamin D (12.25–16.58 IU/g), calcium (141.91–143.40 mg/100 g), and phosphorus (93.74–94.84 mg/100 g) remained statistically unchanged, calcium absorption increased significantly from 12.24% to 29.51% with the addition of sappan wood powder. Therefore, this study successfully developed a bone health drink rich in calcium and antioxidants, formulated from soybean sprout extract combined with sappan wood powder.
